Cancer Fighting Recipes with Local Twist

After our interview with Chef Heman, we asked chef to share with us some recipes that are healthy and easy to prepare at home. He gave us not one but TWO cancer-fighting recipes with a local twist that everyone will be able to enjoy. Let us all get out our aprons and cook up some delicious meals!

The Wonderful Fruity Tempeh “White Rojak”

 

Ingredients:

For the Rojak:

  • 1 cucumber
  • half a guava, diced
  • half a green apple, diced
  • 1 pineapple, diced
  • 2 strawberries
  • half a pear, diced
  • 6 lychees (from a can)
  • 5g sesame seeds
  • 5g crushed peanuts
  • 1 tempeh

For the avocado cream:

  • 1 avocado
  • 2 tbsp cream
  • half a white/red onion, sliced

For the sauce:

  • 4 tbsp plum paste
  • 1 tsp sambal
  • 5g cilantro leaves (chopped)
  • juice of half a lemon
  • 10g water
  • 20g ginger flower

Method:

  1. Wash and rinse the cucumber, guava, strawberries and pear.
  2. Dice all the fruit and tempeh into cubes. Set the tempeh aside to fry.
  3. Prepare the sauce by combining the plum paste, sambal, chopped cilantro, lemon juice, water and ginger flower together. Keep chilled.
  4. Mash the avocado. Mix in the cream and chopped onion. Set aside and keep chilled.
  5. Prepare pot of oil to fry the tempeh. Bring the oil to 180oC and fry the tempeh till golden brown.
  6. Arrange all the ingredients on a plate and pour the rojak sauce over. Sprinkle the sesame seeds and crushed peanuts.
  7. Serve with avocado cream.

Note: you can use any fruit you prefer.

Stir-Fried Four Grain Rice with Poached Egg Salad

Recipe below is for 4.

Ingredients:

For the 4 grain rice:

For the poached egg:

  • 1 fresh egg
  • 1 tbsp apple cider vinegar
  • 500ml water
  • 300g ice + 400ml water (too cool down the poached egg)

Method:

  1. Cook the blackberry rice, redberry rice, barley and white rice separately.
  2. Once all the grains are cooked, let cool and combine them together.
  3. Heat up your pan or wok with oil to stir fry the garlic and scramble the eggs before adding the 4 grain mixture. Stir-fry everything until it is very hot.
  4. In a separate pot, heat up the 500ml of water over a small flame. Add in the apple cider vinegar.
  5. Crack the egg and add it into the pot gently. Once the shape has formed, scoop it out and place it in the ice water.
  6. Plate the 4 grain rice, topping it with the fresh salad and the poached egg. Enjoy!
